Vegan diet case study. Presented by Jane Whitbread, APD
Jane’s case study is Dani, a 40 yr old woman who has been vegan for three years and has recently been experiencing fatigue.
Jane uses food analysis software to assess Dani’s diet, which she finds is lower than recommended for the nutrients thiamine, B12, iron, selenium and iodine.
Using plant-based foods (meal and snack ideas) Jane describes her suggestions to Dani which could improve the nutritional adequacy of her diet.
This case study is an excellent resource for dietitians working with vegan clients. It provides practical detail on the nutrients commonly at risk in vegan clients with meal and snack suggestions to improve their nutrient profile. Additionally, Jane provides tips on supplementing and the interpretation of blood test results.
